A Delicious Twist on Pancakes You Can Stack, Slice & Share

As a teenager, I had no idea that people stacked pancakes into tall, photo-worthy towers. In Slovakia, we called them palacinky, and they were always flat. They were rolled with jam or folded with cocoa; I never saw a pancake stack.

One day, I found a recipe in my mum’s old Slovakian cookbook: it looked like a pancake cake layered with apple filling. I was so intrigued, I begged her to help me make it. And that’s where this idea was born—a tall, indulgent pancake cake that blends tradition with today’s brunch vibes.

What Is a Pancake Stack (or Pancake Cake)?

According to Google, a full pancake stack is five pancakes. I made six—because why not?

This classic layered breakfast has stood the test of time. People love it for its simplicity, comfort, and versatility. Whether it’s a lazy weekend treat or a special occasion like a birthday or holiday, a stacked pancake dish always brings a smile.

Did you know that in some families, building a pancake stack is a weekend tradition? Everyone gathers around the table, layering pancakes, adding toppings, and creating their own edible masterpiece. It’s not just breakfast—it’s a moment of togetherness.

A few months back, my second son visited while I was making pancakes. He asked if I could make him a pancake “cake”, so I made this full pancake stack, and we ate it together.

What you need to build your stack

Ingredients:

To build this pancake cake, I used my go-to high-protein pancakes, a recipe that balances indulgence with nutrition.

NOTE:

This stack is made with my High Protein Pancake for One recipe — I just tripled the ingredients to get six fluffy layers. They’re filling, satisfying, and perfect if you want something indulgent and high in protein.

WANT TO SWITCH IT UP?

You can absolutely use a different base if you prefer. This is where it gets fun. You don’t need one specific recipe. You can build your stack using any of these:

  • Oat Bran Pancakes by Helena – A lighter, fibre-rich option with fewer carbs. Great for smaller portions or a healthier twist.

I didn’t include topping for the pancake in the recipe nutrition, but here are a few ideas I love:

  • Berries (fresh or frozen) – We often use frozen ones, especially here in Dubai where they’re budget-friendly.
  • Sugar-free sauces – Maple, chocolate, or Sukrin syrup all work well.
