Ingredients:

  • Butter
  • Onion
  • Garlic cloves
  • Broccoli, courgette(summer squash), kale, savoy cabbage
  • Celeriac root, swede, or rutabaga
  • Vegetable stock or chicken stock
  • Salt
  • Ground black pepper
  • Stilton cheese or cheddar cheese
  • Single or double-cream
  • Italian herbs, Herbs de Provence, or Thyme
  • Cayenne pepper-optional
  • Sour cream-optional

NOTE:

How to make this healthy green vegetable soup

1. Make your stock: Dissolve the cube in boiling water.
2. Chop: Cut onion, garlic, celeriac, and all other vegetables into chunks.
3. Sauté base: In a deep pot, melt butter. Add onion and garlic. Cook 2–3 min until fragrant.
4. Add celeriac: Cook for another 2–3 minutes until golden.

Ingredients
 

  • 1-2 tbsp Butter
  • 1 large Onion
  • 3-5 cloves Garlic
  • 4 cups Mixed green vegetable - broccoli, courgette(summer squash), kale, savoy cabbage
  • 1 cup Celeriac root - or swede or rutabaga
  • 1 cube Vegetable stock - or chicken stock
  • 7 cups Boiling water - or more if needed
  • 1/2 tsp Salt - add more if needed
  • Ground black pepper
  • 1/2 cup Stilton cheese - or cheddar cheese
  • 1/2 cup Single cream - or double cream
  • Italian herbs - or Herbs de Provence
  • Cayenne pepper - optional
  • Sour cream - optional

Instructions

  • Put the stock cube into a jug or pan, pour in boiling water and stir to dissolve.
    1 cube Vegetable stock
  • Chop onion, garlic, celeriac and all the other vegetables into chunky pieces.
  • Melt butter in the deep pot. Add chopped onion and garlic and stir fry 2-3 minutes, until fragrant.
    1-2 tbsp Butter, 1 large Onion, 3-5 cloves Garlic
  • Add celeriac root and stir fry for 2 minutes until golden brown.
    1 cup Celeriac root
  • Add the rest of the vegetables. Stir fry for another 2 minutes.
    4 cups Mixed green vegetable
  • Pour the stock to the pan and boil for 20 minutes on medium heat, stirring occasionally.
    7 cups Boiling water, 1/2 tsp Salt, Ground black pepper
  • Season to taste with sea salt and black pepper, then pulse until smooth using a stick blender or liquidizer.
  • Add cheese and cream to the soup, and let it simmer gently until melted.
    1/2 cup Stilton cheese, 1/2 cup Single cream
  • Add herbs and cayenne pepper if using, stir well. And turn off the heat.

  • Divide soup into bowls and a tablespoon of sour cream if using.
