What do you need to make this crispy wings
To make these delicious chicken wings at home, you don’t need anything fancy, just a handful of flavour-packed ingredients you probably already have. Whether you’re roasting or grilling, these ingredients create a marinade that takes your wings from basic to absolutely irresistible.
Ingredients:
- Chicken wings
- Oil
- Butter
- Dry white wine
- Paprika powder
- Cayenne pepper, chilli powder or crushed chillies for spicy wings
- Salt and pepper for taste
- Garlic powder
- Italian herbs, Herbs de Provence or dry/fresh Sage
- Boiling water-optional
Feel free to adjust the heat or herbs to match your taste. These wings are easy to customise and hard to mess up.
How to prepare wings for roasting
This recipe is for roasting chicken wings in the oven, but you can easily adapt it for the BBQ (see my notes). The steps are simple, and the result is wings that are crispy, flavourful, and full of juicy goodness.
1/ To ensure the best possible taste and texture of the chicken wings, clean them thoroughly by removing any feathers that may still be attached. So, wash them in cold water and rub away extra skin.
2/ Place the cleaned wings in a large bowl.
For the marinade:
3/ Melt the butter and mix it with olive oil and wine (if using). Then add paprika powder, cayenne pepper (if you want spicy chicken wings), garlic powder, herbs, salt, and pepper. Mix everything with a fork or spoon to make a marinade-looking sauce, and pour the mixture over the wings. Then, shake the bowl well to ensure all the wings are evenly coated.

4/ Either allow coated wings to rest for 30 minutes at room temperature or make them in advance and leave them covered in the fridge overnight.
5/ Preheat the oven to 180 ℃.
6/ When hot, place the wings in an oven-proof dish (I like to use a ceramic or glass dish), cover with aluminium foil, and bake for 20 minutes. You can also use a large aluminium foil tray with a lid.
7/ Pull the chicken wings out of the oven and remove the foil. If there isn’t any juice, add 1/4 cup of boiling water.
8/ Turn the heat to 200℃, return the wings to the oven and roast for 10 minutes or until they turn light golden brown.
NOTE:
Instead of putting the wings in the large bowl, you can use a big zip bag to cover the wings easier.
If you’re barbecuing wings, skip steps 6 and 7. Instead, place the wings directly on the grill grate and turn them frequently to prevent burning.
The result? Smoky, charred edges with juicy meat inside—a summer favourite at our house.

Instructions
- Turn the oven to 180 ℃.
