Before I moved to the UK, I had no idea what an English breakfast was, nor had I ever heard of it. I honestly thought ham and eggs were the English breakfast! Turns out, it’s a whole plateful of sausage, bacon, eggs, mushrooms, beans, toast, and more. Delicious, yes — but also a calorie bomb. That’s why I came up with a lighter version.

What Do You Need For This High-Protein Breakfast

Here’s what you need for this quick, low-carb English breakfast:

Ingredients:
  • 1 egg (or 1 egg + 1 egg white for extra protein)
  • 2 rashers of bacon
  • A handful of sliced mushrooms
  • Butter – optional
  • 1 slice of 90-second bread or any low-carb bread
  • Salt, pepper, and garlic powder to taste

How to Cook This Healthy Breakfast

1./ Fry the bacon in a non-stick pan over medium heat for about 1 minute.

2./ Add butter if using, then sliced mushrooms. Sauté for 3 minutes.

3./Season mushrooms with garlic powder and freshly ground pepper.

4./Crack an egg (plus egg white if using) into the same pan.

5/ Place your slice of microwave bread gently on top of the egg and press slightly.

6./ Let it cook for 1 minute or until the egg is done to your liking.

7./ Put the bacon and mushrooms on the plate. Flip the egg-bread stack so the egg is on top. Season to taste and enjoy!

Ingredients
 

  • 2 rashes Bacon
  • 3 large Mushrooms - sliced
  • 1 Egg
  • 1 slice  90-SEC BREAD SIMPLE AND TOASTABLE - or any other low-carb bread
  • 1 tsp Butter - optionall
  • pinch Garlic powder - or garlic salt
  • pinch Salt and pepper - optional

Instructions

  • Fry bacon on medium heat for 1 min.
    2 rashes Bacon
  • Add butter (if using), sliced mushrooms, and fry for another 3 min.
    3 large Mushrooms, 1 tsp Butter
  • Season mushrooms with garlic.
    pinch Garlic powder
  • Break a whole egg (and egg white if using) into the same pan and place a slice of microwave bread on top. Press slightly.
  • Fry the egg on medium heat for 3-4 min until it's cooked to your desire.
  • Transfer bacon and mushrooms to a plate, add the bread upside down so the egg is on top and season with salt and pepper if desired. Enjoy.
