EASY GARLIC CHICKEN WITH GREEN BEANS – 15-MINUTE DINNER

This Asian-inspired garlic chicken with green beans is a quick, tasty stir-fry with tender chicken and rich garlic flavour. Simple, satisfying, and low-carb.

When I lived in Slovakia, Chinese takeaways like the ones in the UK didn’t exist. But we did have a few Asian-style restaurants with dishes inspired by different parts of Asia. One of my favourites was a place in Košice called Ázia. Their food was always spot-on, but going there was a special treat. It was pricey, so we only went for birthdays, family occasions, or business meetings.

Still, I never forgot the taste of their garlic chicken with green beans. It was bold, savoury, and deeply satisfying. So I learned how to make my version at home, one that’s simple, fast, and packed with flavour, using ingredients I always have in the kitchen.

NOTE:

What Do You Need For This Quick Chicken Dinner

This recipe uses just a few ingredients, but they work together perfectly.

Ingredients:
  • Chicken thighs (boneless and skinless)
  • Green beans
  • Egg
  • Olive oil
  • Garlic cloves
  • Vegetable stock
  • Ground caraway
  • Salt

NOTE:

Chicken breasts work too, for this recipe, but thighs stay juicier and absorb the garlic flavour better.

Based on my experience, I strongly recommend using canned green beans for this recipe. They not only have great taste but also significantly reduce the preparation time in the kitchen.

How to Make Garlic Chicken with Green Beans

1./ Slice the chicken into strips (about 1cm wide) and mix it with a whisked egg. Set aside.

2./ Drain the liquid from the canned green beans.

3./ In one pan, heat half the oil. Fry the beans for a few minutes until slightly golden.

4./ In another pan, heat the rest of the oil. Stir-fry the chicken on high heat for 2–3 minutes.

5./Add the chicken to the beans and stir-fry for 2 minutes.

6./ Gradually add vegetable stock and cook on high until the liquid evaporates.

7./Add sliced garlic and ground caraway. Stir well, turn off the heat, and serve.

My Tips & Tricks For This Low-Carb Chicken Recipe

  • ✅ Use canned beans to save time – they’re ideal for this quick stir-fry.
  • ✅ If using fresh or frozen beans, blanch them in salted water for 3 minutes first.
  • ✅ Slice the garlic thinly—don’t press or crush it.
  • ✅ Ground caraway is a must, not cumin! You can grind whole seeds yourself.
  • ✅ Don’t drown the dish in stock; just dissolve your stock cube in a few tablespoons of hot water.

NOTE:

Use vegetable stock for flavour. Use only a few tablespoons of water to dissolve your stockpot cube.

  • ✔️ Over regular rice, if you’re not counting carbs, this is a classic way to enjoy any easy chicken stir-fry. Jasmine or basmati rice both work well.

Ingredients
 

  • 3 large Chicken thighs - boneless and skinless (or 2 chicken breasts
  • 1 whole Egg
  • 3 tbsp Olive oil - divided
  • 2 cans Green beans - cut or whole
  • 4 Garlic cloves
  • 1/4 cup Vegetable stock - or less
  • 1/2 tsp Ground caraway

Instructions

  • Cut the chicken into thin slices and mix well with the egg.
    3 large Chicken thighs , 1 whole Egg
  • Thinly slice the garlic and drain the green beans.
    2 cans Green beans , 4 Garlic cloves
  • Heat half of the oil in the frying pan. When hot, add beans and stir fry for a couple of minutes.
    3 tbsp Olive oil
  • Heat the rest of the oil in the second pan, then add the chicken mixed with egg. Stir quickly, so the pieces don't stick together by 2 min.
  • Add the beans to the pan with the chicken and stir fry for about 5 minutes.
  • Add vegetable stockpot, little by little, just as much as needed.
    1/4 cup Vegetable stock
  • Add ground caraway and sliced garlic, stir and turn off the heat.
    4 Garlic cloves, 1/2 tsp Ground caraway , a pinch Salt
