Roasted chicken wings are incredibly popular for all the right reasons! They are a real crowd-pleaser because of their rich, savoury flavour, crispy texture, and versatility. From tangy barbeque to spicy buffalo, there is a wing flavour for every craving. Moreover, they’re the ultimate finger food, perfect for casual get-togethers or game nights.

What makes these ultimate chicken wings so good?

Cooking chicken wings in the oven is easy, but cooking them on the BBQ is fun. The satisfying crunch of crispy skin and the juicy, tender meat delight every bite. Elevate your chicken wings to a whole new level of deliciousness with a winning combination of butter, oil, and wine. And for that extra touch of flavour, add some freshly chopped sage. You won’t regret it! There is always a fight in our family over the last wing.

What do you need to make the best wings

Ingredients:

  • Chicken wings
  • Oil
  • Butter
  • Dry white wine
  • Paprika powder
  • Cayenne pepper, chilli powder or crushed chillies for spicy wings
  • Salt and pepper for taste
  • Garlic powder
  • Italian herbs, Herbs de Provencale or dry/fresh Sage
  • Boiling water-optional

How to prepare chicken wings

This recipe is for roasting the chicken wings in the oven. However, if you plan to BBQ the wings, see my notes.

1/ To ensure the best possible taste and texture of the chicken wings, clean them thoroughly by removing any feathers that may still be attached. So, wash them in cold water and rub away extra skin.

2/ Place the cleaned wings in a large bowl.

For the marinade:

3/ Melt the butter and mix it with olive oil and wine (if using). Then add paprika powder, cayenne pepper (if you want spicy chicken wings), garlic powder, herbs, salt, and pepper. Mix everything with a fork or spoon to make a marinade-looking sauce, and pour the mixture over the wings. Then, shake the bowl well to ensure all the wings are evenly coated.

4/ Either allow coated wings to rest for 30 minutes at room temperature or make them in advance and leave them covered in the fridge overnight.

5/ Preheat the oven to 180 ℃.

6/ When hot, place the wings in an oven-proof dish (I like to use a ceramic or glass dish), cover with aluminium foil, and bake for 20 minutes. You can also use a large aluminium foil tray with a lid.

7/ Pull the chicken wings out of the oven and remove the foil. If there isn’t any juice, add 1/4 cup of boiling water.

8/ Turn the heat to 200℃, return the wings to the oven and roast for 10 minutes or until they turn light golden brown.

NOTES:

Instead of putting the wings in the large bowl, you can use a big zip bag to cover the wings easier.

If you’re barbecuing wings, skip steps 6 and 7. Instead, place the wings directly on the grill grate and turn them frequently to prevent burning.

Once the chicken wings are properly cooked, serve them with:

  • Sourdough or low-carb Rye-style bread
  • Greek salad
  • Steamed or roasted vegetables
  • Your favourite dips and sauces

While the options are endless, I like to eat BBQ chicken wings alone.

  • 1 kg Chicken wings
  • 2 tbsp Olive oil - or Avocado oil
  • 2 tbsp Butter - melted
  • splash of White wine - optional
  • 1 tsp Paprika powder - plus 1/2 tsp Cayenne pepper for spicy wings

Instructions

  • Turn the oven to 180 ℃.
  • Clean the chicken wings and remove any reminding feathers.
  • Put the wings in a large bowl.

    2 tbsp Olive oil, 2 tbsp Butter, splash of White wine
  • Then add paprika powder, cayenne pepper (if you want spicy chicken wings), garlic powder, herbs, salt, and pepper. Mix butter and spices with a fork or spoon to create a marinade-looking sauce, and pour the mixture over the wings.
    1 tsp Paprika powder, 1/2 tsp Salt, 1 tsp Italian herbs, 1/2 -1 tsp Garlic powder, Ground black pepper
  • For even coating, shake the bowl well. Ensure every wing is coated equally. Use a wooden spoon if needed.
  • Allow it to rest for at least 30 minutes.
  • Place the wings in an oven-proof dish (I like to use ceramic or glass dish), cover with aluminium foil, and bake in the oven for 20 minutes.
  • Take the chicken wings from the oven and remove the foil. If there isn't any juice, add 1/4 cup boiling water.
  • Turn the heat to 200℃, return the wings to the oven and roast for 10 minutes or until they turn light golden brown.
  • Serve with your favourite salad or roasted or steamed vegetables and sauces of your choice.
