  • Broccoli, courgette(summer squash), kale, savoy cabbage
  • Celeriac root or swede or rutabaga
  • Vegetable stock or chicken stock
  • Salt

  • Stilton cheese or cheddar cheese
  • Single or double-cream
  • Italian herbs or Herbs de Provence or Thyme
  • Cayenne pepper-optional

How to make this green vegetable soup

1/ Put the stock cube into a jug or pan, pour in boiling water and stir to dissolve.

2/ Chop onion, garlic, celeriac and all the rest of the vegetables into chunky pieces.

3/ Melt butter in the deep pot, add chopped onion and garlic and stir fry for 2-3 minutes, until fragrant.

4/ Add celeriac root to the pot and stir fry for 2-3 minutes or until golden brown.

5/ Then add the rest of the vegetables. Stir fry for another 2 minutes.

6/ Pour the stock into the pan and boil for 20 minutes on medium heat, stirring occasionally.

7/ Season to taste with sea salt and black pepper, then pulse until smooth using a stick blender or liquidizer.

8/ Add cheese and cream to the soup and let it simmer on medium-low heat until melted.

9/ Finally, add herbs and cayenne pepper if using, and stir well. And turn off the heat.

10/ Divide soup into bowls and a tablespoon of sour cream and croutons. Bon Appetit!
