If you enjoy breakfast or brunch or practice intermittent fasting, you might still like this easy, healthy breakfast recipe, which includes eggs and avocado. It’s a simple yet impressive meal worth trying.

Many people use avocados only for guacamole, but they are also a great and healthy choice for breakfast. Avocados are rich in “good fats”, such as monounsaturated and polyunsaturated fats, which can make you feel fuller. Additionally, they have been linked to lower levels of bad (LDL) cholesterol.

Whoever said avocados are bland clearly hasn’t tried them with a pinch of salt, freshly ground pepper, and a squeeze of lime. Just a few simple ingredients turn this humble fruit into a heavenly experience for your taste buds. And when you add some garlic, crushed chillies, or cayenne pepper, you turn this fruit into a mouth-watering spread that will leave your taste buds craving more. But if you like a chunkier texture, skip the mashing and keep the avocado in cubes. You won’t be disappointed, and this healthy breakfast is the perfect start to the day.

Eggs for breakfast

Eggs are great for a weight loss diet, especially if you eat them for breakfast. They are rich in protein and low in calories, but the calorie level also depends on how you cook them. The best way to cook the eggs is to poach them. However, I usually make fried eggs for breakfast using just a bit of butter in this recipe, as frying is the fastest way to cook the eggs if you are on the run. You can make eggs without adding fat using a nonstick frying pan.

MY TIP: Adding extra egg whites to your egg is another way to increase protein intake. To do this, use one whole egg and egg whites liquid.

How to make it

I love avocados for breakfast, not just because they give a fantastic start to the day but also because they are good for the brain.

1/ Cut the avocado in half lengthwise and twist to open. You will end up with one half with the pit and one half with the hole.

2/ The easiest way to remove avocados from their skins is to cut the flesh into squares. Use a cutlery knife to avoid cutting through the skin (and your fingers). Then, spoon out the flesh.

3/ Mash avocado with a fork, drip some juice from the lime (if using) and taste with pepper and salt.

4/ Fry eggs and egg whites (if using). I like the yolk soft and runny, so I cook it on high heat for a minute or two, then turn off the heat and let the egg white harden for a few seconds.

5/ Finally, place ready eggs on the slice of bread and serve with mashed avocadoes.

NOTE 1:

A quicker method is to fry the egg for a minute, turn the heat off, and gently flip the egg with the spatula so the egg whites harden while touching the hot pan for a few seconds.

NOTE 2:

Omit the bread for a low-carb day, or try one of my low-carb bread.

For a delicious twist, try serving poached eggs on mashed avocado on toasted bread, with fresh ground pepper or crushed chillies for an extra kick. It’s a simple yet satisfying breakfast that’s sure to start your day off right.

Instructions

  • Cut the avocado in half lengthwise, and twist to open. Cut the flesh and spoon out from the skin.
