When I lived in Slovakia, there were no Chinese restaurants like in the UK. But we had a few Asian-inspired restaurants with menus from all across the continent. In my hometown of Kosice, there was a restaurant called “Azia.” Their kitchen was exceptional, but dining there was expensive, so we only went on special occasions. All the food there was delicious, and soon, I had a few favourites. I especially liked this garlic chicken with green beans, and I learned how to cook it myself.

Just out of curiosity, I looked up the history of Chinese restaurants in the UK and, according to Wikipedia, opened in 1908 in London. If you want to know more, look here.

What do you need garlic-chicken with green beans

Although the recipe is easy and straightforward, it’s incredibly tasty! The required ingredients are as follows:

Ingredients:

  • Chicken thighs, boneless and skinless
  • Egg
  • Green beans
  • Olive oil
  • Garlic cloves
  • Vegetable stock
  • Ground caraway
  • Salt

NOTES:

  • You can choose chicken thighs or chicken breasts for this recipe, depending on your preference.
  • Based on my experience, I strongly recommend using canned green beans for this recipe. They not only have a great taste but also significantly reduce the preparation time in the kitchen.

How to cook this garlic-chicken with green beans

1/ Cut the chicken into half-inch (1cm) slices and combine with whisked whole egg. Set aside.

2/ Drain the liquid from the canned green beans.

3/ Heat a frying pan with half of the oil; when hot, add green beans and fry for a few minutes.

4/ Heat the oil in the second frying pan, add the sliced chicken, and stir briskly to prevent the meat from sticking together for 2-3 min.

5/ Transfer the chicken to the pan with the beans, stir fry together for 2 minutes, then gradually add the vegetable stock.

6/ Stir for an additional 2 minutes on high heat until no liquid remains.

7/ Now, add ground caraway and sliced garlic, stir and turn the heat off.

8/ Finally, enjoy garlicky chicken with beans on its own or with cauliflower rice.

MY TIPS AND TRICKS

  • If using fresh or frozen green beans, blanch them for 3 minutes in salted water before frying.
  • Cut the green beans into smaller pieces (as they’re in this recipe) or use them whole.
  • Use only the egg white rather than a whole egg, if you prefer.
  • Make sure you are using Ground caraway seeds, NOT cumin. You can ground caraway seeds in a coffee grinder or nutribullet.
  • Do not grate or press the garlic; instead, slice it into thin “noodles.”
  • We use vegetable stock for flavour. Use only a few tablespoons of water to dissolve your stockpot cube.
  • You can use Knor vegetable cubes, Kallo vegetable cubes or Bouillon powder for vegetable stock. In Europe, the popular vegetable seasoning is Vegeta-Podravka.

What to serve this garlic-chicken with green beans

  • I like this meal on its own, without any side dishes. It’s so tasty that we are “fighting” over it with my husband. Yes, we are greedy, haha…
  • You can make egg stir-fried cauliflower rice to complete the dish if you desire
  • But you can serve it over egg stir-fried rice if you don’t count the carbs.
  • Also, serving it the next day in a wrap with added soya or teriyaki sauce sounds good.

Ingredients
 

  • 3 large Chicken thighs - boneless and skinless (or 2 chicken breasts
  • 1 whole Egg
  • 3 tbsp Olive oil - divided
  • 2 cans Green beans - cut or whole
  • 4 Garlic cloves
  • 1/4 cup Vegetable stock - or less
  • 1/2 tsp Ground caraway
  • a pinch Salt

Instructions

  • Cut the chicken into thin slices and mix well with the egg.
    3 large Chicken thighs, 1 whole Egg
  • Thinly slice the garlic and drain the green beans.
    2 cans Green beans, 4 Garlic cloves
  • Heat half of the oil in the frying pan. When hot, add beans and stir fry for a couple of minutes.
    3 tbsp Olive oil
  • Heat the rest of the oil in the second pan, then add the chicken mixed with egg. Stir quickly, so the pieces don't stick together by 2 min.
  • Add the beans to the pan with the chicken and stir fry for about 5 minutes.
  • Add vegetable stockpot, little by little, just as much as needed.
    1/4 cup Vegetable stock
  • Add ground caraway and sliced garlic, stir and turn off the heat.
    4 Garlic cloves, 1/2 tsp Ground caraway, a pinch Salt
